Ingredients

  • 8 oz Penne or fettuccine pasta
  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil & 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated parmesan cheese
  • Salt, pepper, and fresh parsley

Instructions

  1. Boil Pasta: Cook the pasta in salted water according to package directions until al dente. Drain and set aside.
  2. Cook Chicken: Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and slice.
  3. Make Sauce: In the same skillet, melt butter. Add garlic and cook for 1 minute until fragrant. Pour in chicken broth and scrape up any browned bits.
  4. Simmer: Reduce heat to low. Stir in heavy cream and simmer for 2 minutes. Whisk in parmesan cheese until smooth and thickened.
  5. Combine: Toss the cooked pasta and sliced chicken into the sauce. Garnish with fresh parsley and serve immediately.
